Tartar de salmón con hojuelas de Provolone Valpadana DOP picante y salsa de hierbas y limón

Ingredienti:

200 g di salmone
100 g Provolone Piccante
1 limone
50 g yogurt greco
acetosella qb
1 rametto di aneto
pepe rosa
olio evo
sale

Preparazione:

Tagliate il filetto di salmone a cubetti e poi trasferitelo in una ciotola. Conditelo con olio evo, sale e pepe. In una ciotola mescolate lo yogurt, con olio evo sale, pepe ed aneto fresco Adagiate la tartare di salmone su un piatto e dategli la forma con l’aiuto di un coppapasta. Prendete la forma di Provolone Piccante e tagliatela in più pezzi. Ricavate delle scaglie e tenete da parte. Guarnite la tartare di salmone con lo yogurt, le scaglie di Provolone Piccante, la scorza di limone e le foglie di acetosella.
