Tortilla de Patatas con Provolone Valpadana DOP piccante e pancetta affumicata

Ingredienti:

  • 4 uova
  • 4 patate medie
  • 100 gr Provolone Valpadana DOP piccante
  • 100 gr di pancetta affumicata
  • Olio extravergine
  • Sale q.b.
  • 200 gr acqua

Preparazione:

In una padella rosolate la pancetta a pezzetti senza condimento. Unite le patate ridotte a cubetti. Cuocete dolcemente per una ventina di minuti, aggiungendo 200 gr di acqua finché le patate non saranno cotte perfettamente. Versate tutto in una ciotola e aggiungete le uova e il Provolone Valpadana DOP piccante ridotto a cubetti. Salate, mescolate e trasferite il composto in una padella unta di olio. Cuocete la tortilla a fuoco dolce con il coperchio per circa 10 minuti, poi girate (aiutandovi con un piatto piano) e continuate la cottura anche dall’altro lato. Servite calda.
