Risotto con Provolone Valpadana D.O.P. dulce y Amarone de la Valpolicella DOCG

Ingredienti:

  • 300 g de arroz “Vialone Nano”
  • 500 ml de caldo de carne
  • 1 cebolla rubia
  • 50 g de mantequilla
  • 300 ml de Amarone de la Valpolicella DOCG
  • 160 g de Provolone Valpadana D.O.P. dulce
  • sal, pimienta negra

Preparazione:

Hacer hervir el caldo con 100 ml de Amarone de la Valpolicella DOCG. Sofreír la cebolla triturada muy fina en una sartén pequeña con la mitad de la mantequilla, añadir los otros 50 ml de vino, hacer evaporar y apagar el fuego. Dorar el arroz a seco in una cazuela de bordes altos. Añadir el  sofrito  y un cucharón abundante de caldo. Mezclar a menudo con un batidor de silicona, añadir poco a poco otros cucharones de caldo y llevar el arroz al punto de cocción. Añadir y remover, con el fuego apagado el resto de la mantequilla y del Amarone de la Valpolicella DOCG y 100 g de Provolone Valpadana D.O.P. dulce.
