Spaghetti di cetriolo con Provolone Valpadana D.O.P. piccante stagionato e trota affumicata

Ingredienti:

  • 60 g di Provolone Valpadana D.O.P. piccante stagionato
  • 2 cetrioli
  • 300 g filetto di trota affumicata
  • 1 limone
  • 1 cucchiaio di senape in grani
  • 1 cucchiaio di sciroppo d’acero
  • Olio extravergine d’oliva, sale, pepe, aneto fresco

Preparazione:

Mescolate 4 cucchiai d’oro extravergine d’oliva con la senape, lo sciroppo d’acero e il succo di limone. Regolate di sale e pepe e aggiungete qualche ciuffetto di aneto. Sbattete bene e tenete da parte. Lavate e asciugate accuratamente i cetrioli e passateli con l’apposito strumento per ricavarne degli spaghetti. Disponete il filetto di trota affumicata nei piatti individuali e posizionatevi sopra un nido di spaghetti di cetriolo, cospargete con la salsa precedentemente preparata e completate con il Provolone Provolone Valpadana D.O.P. piccante stagionato a scaglie. Servite.
